Simon has been using this Italian rub on chicken for years.

But don’t save it just for chicken. It’s great in burgers or meatballs, over grilled tomatoes and if you’re throwing a prawn (or pretty much anything for that matter) on the BBQ or in the frypan, a good sprinkle of this will make your food sing.

Roast Italian Rubbed Chicken

There's roast chicken and there's roast chicken!! The key to this is succulent, fresh, healthy tasty free range chickens and of course the 5% magic of my new Italian seasoning!

 Be generous and don't be afraid to really flavour under the skin and all over!! It will be worth it!!


  • 1 size 13 chicken, free-range organic  
  • 30g Simon Gault Home Cuisine Italian Seasoning 



Preheat an oven to 180°C.

Remove any excess fat from the neck and bottom cavity of the chicken, then remove the wing tips by chopping through the outermost joint with 

a sharp knife. 

Using your ļ¬ngers, loosen the skin from around the breast and thighs, then massage some of the Simon Gault Home Cuisine Italian Seasoning under the skin. 

Liberally season the cavities with the rub as well as the inside and outside of the chicken. Place the chicken breast side up on a the roasting tray and place into the oven and cook for about 1 hour until the chicken has reached an internal temperature of 65°C (or until the juices run clear when the thickest part of the thigh is pierced with a skewer). 

Allow the chicken to rest for a good 10 minutes in a warm place, then cut into portions and serve.
