Boquerones are fresh filleted anchovies which have been marinated in a White Wine Vinegar and then preserved in Olive oil with Garlic and chopped parsley.
These are a traditional Spanish Tapas dish handed down from Roman times, and still made in local households to date.
They are simply delectable
Like its friend the sardine, the anchovy is an oily fish, packed full of proteins and minerals, omega-3 oils - protecting against heart disease and "good" for cholesterol.
